JOB PURPOSE

To manage his/her assigned section of the kitchen in a professional manner in order to prepare and provide high quality food in accordance to a consistent standard.

JOB DUTIES.

  • Is fully aware of all menu items, their recipes, methods of production and presentation standards.

  • Is knowledgeable on all standard procedures and policies pertaining to food preparation, receiving, storage and sanitation.

  • Prepares and maintains mise-en-place for shift and for next day.

  • Ensures preparation of consistent high quality food items in assigned section, in accordance with guests’ requests and hotel’s standards.

  • Supports Executive Chef in achieving departmental objectives.

  • Assesses quality control and ensures junior members adhere to service standards.

  • Leads and supports the junior members of the team including but not limited to training of new Demi and Commis Chefs.

  • Supports the control of food cost.

  • Carries out close liaison with all sections of the kitchen in order to ensure smooth and efficient service.

  • Maintains levels of productivity at assigned stations through activities including, but not limited to assigning work to Demi and Commis Chefs, ordering food products from store room and expediting meal periods.

  • Fills up all HACCP needs requirements for the shift.

  • Maintains cleanliness of all areas including but not limited to refrigerators, freezers, ovens, shelves, worktables and sinks.

  • Maintains open lines of communication with Restaurant Manager in order to maintain high quality levels of food items.

  • Controls food spoilage through activities including, but not limited to proper rotation of food stock, proper storage of food before and after use.

MINIMUM REQUIRMENTS

  • A diploma in culinary or related professional area.

  • Minimum of two year working experience in the Kitchen
